A crop of less than 3 tonnes per hectare was whole bunch pressed over many hours, to gently extract the subtle flavours of this challenging grape. Finished with a small level of residual sugar, after extended cool fermentation. Crisp, ripe Bosca pears and Baklava on the nose, match with a smooth, dry palate.
This wine strongly typifies the Blue Rock vineyard with its crisp minerality and breadth of flavour that evenly spreads through the mouth. Full and rich with ripe fruit intensity balanced by an underlying steely / mineral palate.
